Just because it’s something healthy does not mean that it isn’t tasty! I decided to compile some of my favorite lunch ideas for those that didn’t have time to meal prep or plan ahead. With little ones at home, making a healthy lunch can take time. However, it doesn’t have to! On the weeks that I haven’t meal prepped … let’s be honest this whole summer I haven’t! Summer has just become so busy, and my schedule is totally off. Any other momma’s out there experiencing that?!
I’ve kind of let myself go this summer, but starting this week I’m trying to get back into a routine of healthy food! I know I feel better about myself when I eat mostly healthy foods. … I said mostly – I leave room for some yummy cookies, chocolate, and especially ice cream (in the summer!) SO, since I’m getting back on the band wagon this week, I’ve listed some of my go to’s for quick, easy, and healthy lunch options. None of these require baking anything before hand!
Egg, spinach, and mustard on an Ezekial muffin – just microwave the egg for 45 seconds, place on toasted muffin, top with spinach and mustard, and enjoy!
Pita chips, diced deli chicken breast, diced red pepper, diced pineapple, and goat cheese
Sliced deli chicken, spinach, and feta with a side of carrots
Tuna salad – can of tuna, 2 cups spinach / lettuce, almonds, drizzle of apple cider vinegar
Spinach, prosciutto, blueberries, and goat cheese
Spinach, bell peppers, and harvati cheese
