Tasty Tuesdays: Using Leftovers For New Meals!

Making a delicious dish can happen by getting creative with left overs! I’ve started to do this more often as we are trying to save on our grocery budget! Stretching leftovers can be so helpful with that! And … when you have picky eaters that aren’t fans of leftovers, it can be tough! But … challenge accepted! I’ve had fun trying to find ways to use them!

One of my favorite things I like to make is this Drunken Root Beer Pulled Pork recipe from Three Little Foodies! She has some delicious recipes on her blog, so check her out!! In her recipe she uses an Insta Pot, but there are crock pot directions as well(which is what I use). When I make the recipe we usually have the pulled pork on homemade buttermilk biscuits (shared on my blog here). I then like to portion off what we have left and freeze in separate containers. I label the date and what I’ll use them for. This makes it easier to remember that way it doesn’t go to waste. (A good tip – let the meat cool to room temperature before freezing!)

Drunken Root Beer Pulled Pork

Some things I make with the left over pulled pork are:

BBQ Pulled Pork Quesidillas  – leftover drunken root beer pulled pork, Colby Jack cheese, and BBQ sauce. You could also add chopped sautéed onions and mushrooms!

 

Baked BBQ Nachos – place chips of your choice (I use Blue Corn for me and regular Tostitos for my family) on a baking sheet, drop pieces of meat over the chips, sprinkle cheese on top, and drizzle BBQ sauce all over. Bake at 350 for 15 minutes.

Pulled Pork Salad – I like to add the meat to my salads as well. A good salad is spinach, chard, drunken root beer pulled pork, chopped yellow peppers, some crunched blue corn chips, and ranch dressing.
