Tasty Tuesday’s: Healthy Chocolate Chip Pumpkin Pancakes

I think I’m dedicating the whole month of October to pumpkin flavored foods!! This past Saturday was a cold and gloomy day where my family spent the day in our pjs …. it was perfect! I got the itch to make some pumpkin pancakes for lunch. I really wanted some, so I created a healthy version that I could enjoy along with my family. And y’all, this recipe was a huge HIT with my family ….. and they had NO IDEA they were healthy!!!! It was a win win for me! I have found that any time I use more spices like cinnamon or pumpkin I can hide the healthy parts with my picky family. LOL


Melt coconut oil in a small bowl in the microwave. Set aside to cool off. 

In a large bowl whisk together the flour, stevia, baking powder, salt, cinnamon, cloves, and mace.

Pour in the almond milk, eggs, coconut oil, vanilla extract, and pumpkin puree. Mix until completely combined.

*Make sure you set your eggs out to be room temperature. Also make sure to cool your melted coconut oil.

Fold in the dark chocolate chips!

Let the batter sit for about 10 minutes. This allows everything to soak in together.

Preheat skillet to 250 degrees. Cook for about 2 minutes on each side.

Enjoy with pure maple syrup!

  • 1/4 tsp ground mace (or nutmeg)
  • 1 1/2 C Almond Milk
  • 2 eggs
  • 1/2 Coconut Oil (melted and cooled)
  • 1 tsp vanilla extract
  • 1 C pumpkin puree
  • 1/2 C dark chocolate chips
  • Pure Maple Syrup

Directions:
