Have you ever had a recipe you make that brings back a flood of memories? I have several from my grandma’s chicken and gravy to this tasty taco salad recipe. I remember the day I learned to make it. I was 16, and my step mom, Haley, asked me to drive to the store for some fresh lettuce (I was so excited to drive anywhere then!). When I got back, feeling all awesome inside because I drove somewhere by myself, she taught me how to build this super easy taco salad.
This recipe is special in a sense that it was one of the first recipes I learned to make that I could do by myself. But it is also special because it makes me think of my step mom, Haley. You see she passed away a little over a year later, so I hold that memory and this recipe near and dear to my heart. Now I get to make it for my family, and it’s become a favorite staple in our house. I can’t get my husband to eat beef, but he devours this meal. My 4 year old request this at least once a week and is obsessed with it! This meal literally takes me 10 minutes, start to finish! It’s the perfect meal for those busy nights!
First, brown up your ground beef.
While the beef is cooking, crush up the Doritos and place half into a large bowl.
Next, add in the shredded cheese.
Layer the lettuce on top.
Repeat the layers of Doritos, cheese, and lettuce. Once the meat is done, pour it on top.
Add in the sweet honey Catalina dressing. The dressing is what makes this salad. You can use Western or regular Catalina dressing, but my family loves the sweet honey flavor!
Stir together and serve! It’s as easy as that!!
1 lb ground beef
2 cups crushed Nacho Doritos
2 cups shredded Colby Jack cheese
One bag shredded lettuce
½ bottle of Sweet Honey Catalina dressing
- Brown ground beef in a skillet on medium heat.
- Crush up one cup of Nacho Doritos in a large bowl.
- Place one cup of Colby Jack cheese into same bowl.
- Pour half the bag of shredded lettuce on top of Doritos and cheese.
- Repeat steps 2, 3, and 4 with the rest of ingredients.
- Pour in cooked ground beef.
- Top with ½ sweet honey Catalina dressing.
- Stir together and serve!
